  • Palak / Spinach Puree - 2 cups Raw rice - 1 cup Yellow moong dhal - 1/2 cup Tomato - 1 ( finely chopped ) Green chilies - 3 Coriander powder - 1 tspn Garam masal powder - 3/4 tspn Sugar - 1/4 tspn Grated ginger - 1/4 tspn Jeera - 1 tspn Cinnamon - 1 inch piece Cloves - 2-3 Asofoetida - a generous pinch Red chilies - 2 Coriander leaves - 1/4 cup finely chopped Turmeric powder - 1/4 tspn Salt - as required Ghee - 5 tspn

Directions

  • 1. Wash raw rice and yellow moong dhal for 3 times. In a pressure cooker, add washed rice, dhal and 6 cups of water and pressure cook it for 5 whistles. In the mean time wash palak, remove the thick stalk and roughly chop it. In a mixer, add roughly chopped palak and grind it into a fine paste using little water.
  • 2. In a broad vessel or pressure cooker add 2 tspn of ghee. Add chopped tomato, grated ginger, chopped green chili and required salt. Saute it for 3-4 minutes. Now add ground palak paste and sugar. Allow it to cook for 5 minutes in low flame. Then add cooked rice, dhal and 7 cups of water. Add coriander powder, turmeric powder and garam masal powder. Adjust salt. Allow it to cook for 10-12 minutes in low flame.
  • 3. Once done, temper khichdi with cinnamon piece, cloves, asofoetida, jeera and red chilies using remaining ghee and add it to the hot palak khichdi. Garnish it with chopped coriander leaves. Serve hot with a dollop of ghee with papad and pickle.I enjoyed hot khichdi with papad and finished my lunch with thick curd. Do try this super healthy palak khichdi and post your valuable comments.
